Cosyn Cymru (Welsh Truckle) is an award-winning dairy in North Wales specialising in unpasteurised ewe's milk cheese and yogurt.
Inspired by a medley of master cheese-makers, Carrie Rimes makes her ewe’s milk products by hand in small batches with natural ingredients, using traditional methods.
Carrie’s goal is to make cheese and yogurt that bring out the best qualities of the milk. She is enthusiastic about adapting to seasonal nuances – every batch needs an individual approach. Patience and tenacity are required to make sure that the cheeses mature happily and successfully. These are life-long skills that Carrie started to explore as a youngster experimenting with cheese-making on the family farm, and more recently during three years working at a small French farm fromagerie in the heart of the Auvergne.
Carrie is now delighted to be back in Dyffryn Ogwen at Cosyn's new dairy, Llaethdy Gwyn - the former Catholic Church on the banks of the Afon Ogwen in Bethesda.
There is a little shop with a viewing window into the cheese room, where you can see Cosyn's award-winning soft lactic cheese, Brefu Bach, taking shape. As well as tasting the cheese, you can also discover a range of other local produce.
Open every afternoon 2pm-5pm. All welcome. Parking on site.
